TOMO Hotelier

Born in Paris on July 7, 1945, the same year in which Baumanière opened at Christmas. 
He passed his baccalauréat  in 1962, went on to France’s top business school, HEC in Paris, and graduated from there in 1967 after an internship at the Waldorf Astoria in New York.

After having done his military service in Tunisia as a hotel manager in Skanes,  he arrived at Baumanière on March 1, 1969, at the request of his grandfather Raymond Thuilier. Beginning with management and administration, he moved on to the dining room in 1970, and in 1973, having trained with the greatest French chefs: TROISGROS, CHAPEL, HAEBERLIN, BOCUSE, GIRARDET...he joined his grandfather in the kitchen, where he has stayed to this day. On Raymond Thuilier’s death in 1993, he took over Baumanière’s destiny.

At Baumanière, he has hosted the world’s great leaders on official visits: the Queen of England, 
Deng Xiaoping… ; on private visits: French Presidents G. Pompidou, J. Chirac, V. Giscard d’Estaing...Princess Grace and Prince Albert of Monaco, several Prime Ministers of Japan...
Famous artists and stars: Jean Cocteau, Luciano Pavarotti, Jean Réno, Johnny Halliday, Pierre Arditi…prominent businessmen: Claude Bébéar, Ludwig Lachmann, Alain Mérieux, Serge Tchuruk, Jean-René Fourtou…

He has worked in Japan, the USA, in London, England, where he created “L’Auberge de Provence” at the Saint James Court Hotel. He is also the author of eight cookbooks.

In 1988, in association with Jean-Pierre Peyraud, he created the Château Romanin vineyard, and continues to apply the principles of biodynamics at the Domaine de Lauzières, where he produces 7,000 bottles of his own wine, called L’Affectif.

Vice-President of the French Haute Cuisine Association since its foundation in 1986 until 1996. Member of the Board of Directors of Relais & Châteaux from 1987 to 2005.
President of the Winegrowers’ Association of les Baux-de-Provence from 1999 to 2012.
Deputy Mayor of les Baux-de-Provence from 1996 to 2001.
Chevalier of the National Order of Merit.
